One of my best friends turned 40 recently. She didn’t want us to make a big deal about it, so we kept the celebration low key – just the girls for wine, cheese, and cake. She was given a tiara, beads, birthday button, and other plastic jewelry to wear, but that wasn’t my doing. I just made this red wine chocolate cake. I used Ghirardelli chocolate and gluten-free baking mix. It was scrumptious! You could taste the wine, but just barely. I noticed the cinnamon more. I didn’t make the topping suggested, since I had marshmallow fondant left over. Easy, breezy, and yummy!
